Data on the dating of linseed oil production workshops (Bezirhane) is extremely scarce. However, in the Ottoman tax records dated 1584; the presence of two linseed oil production workshops in Muşkara is striking. Given these records, it is known that linseed oil workshops belong to the 16th century at the earliest. Linseed oil workshops continued to exist until the 1970s, but then failed to stand the speed of the age.

In the light of current findings, 6 linseed oil production workshops which were the significant industrial organizations of the era have been reached in Kayaşehir. Linseed oil production workshops, which we can think of as today's oil factories, are concrete examples of Nevşehir's ability to transform natural wealth into economy. The process of extracting oil from plants has been known since ancient times. Nutrition, lighting, pharmaceutical industry and varnishing are the main areas where the oils obtained by pressing different plants such as flax (Linum; keten), rocket (Oleum Erucae; ızgın), bluebottle (Cephalariasyriaca; belemir), linseed (Linum usitatissium; zeyrek) are used. Rock-carved linseed oil production workshops, which consist of sections such as furnace (oven), millstone, millpond, sieving section, wooden pressure section and stable, are also among our cultural heritage which are the representatives of folk architecture.
